I'm planning on upgrading my crankset to an ultegra triple. Will my
105 shimano shifters work with the ultegra triple crankset. The specs
indicate that the 105's will accomodate double or triple cranksets.
Thanks for your advice in advance.

You should be just fine. They'll work not only with the Ultegra, but a
large number of aftermarket cranksets as well. Knock yourself out and
do some shopping.

If they are 9s or 10s, yes. If they are 8s, no.

Out of curiosity, how does a double/triple shifter mech determine that
it should allow 2 (or 3) cable indices? Is it simply based on front
derailleur limit adjustment (i.e. so in a double setup, the shifter
can't 'pull' the cable anymore), or is there some more complex
mechanism? I checked the Shimano website, but the answers aren't
exactly forthcoming...the exploded parts diagram shows very little
difference between the left and right brifter.

On a double, you use the first few clicks, then no more limited by the
outer limit screw. On a triple , you use all the clicks.
